Today, I made 3-cup soy sauce chicken. First, I seared the chicken in a cup of oil with scallions, ginger, and garlic until golden brown. Then, I added 1 cup soy sauce, 1 cup of strong rice wine, a little rock sugar, ginseng, and dark soy sauce for coloring. I simmered the chicken for 25 minutes, until it was just done. I kept the water out of the pan, but kept the heat on medium-low, turning the chicken frequently. I kept the lid on and cooked the chicken.
