The shepherd's purse this time is still fresh and large, but it has old stems, so it needs to be cleaned carefully and the old stems removed.
It's very fresh and the portion is enough. It's not so wet and soggy like before that you had to throw away most of it. But because of the nature of shepherd's purse: cleaning, removing the roots, rinsing again, removing all the sediment hidden in the leaves and stems, blanching, chopping... the processing is very time-consuming. The biggest problem is that this batch of shepherd's purse stems are quite old. Even after blanching, they are still stiff and affect the taste. I chopped as much as I could and picked out the ones that couldn't be chopped and threw them away, preparing to make shepherd's purse wontons at night.The last one I bought was a bit disappointing, I hope this batch tastes better than the frozen shepherd's purse.
Fresh shepherd's purse is used to make shepherd's purse tofu soup, which is very delicious. Shepherd's purse doesn't have much flavor, but it's quite fresh. It needs a good wash, so spend more time preparing dishes.
