I used it to make red rubies for chè Thái. It was good.

Excellent, crisp water chestnuts. I minced the entire can to make Lion's Head Meatballs. The water chestnuts remain crisp, even after I browned the Meatballs and steamed them for 40 minutes. I will definitely purchase again.
