Beautiful and intricate, wagashi (traditional Japanese sweets) are artful creations that are both delicate and delicious. One of the oldest and most popular wagashi is yokan. These firm blocks of jelly are typically made from azuki (sweet red beans) and agar (tasteless algae which gives this dessert its firm texture) and enjoyed in bite-sized slices. 

 

To make this unique yokan, Kona Kohbo Usa uses a rare black soybean called kurodamaru. Kurodamaru are larger than regular black soybeans with a richer flavor and stronger natural sweetness, making them the perfect choice for yokan.
