This was a hit on our Thanksgiving celebration! The skin was so crispy and the meat was so flavorful and very tender. So good that I’ll prefer having cochinillo again over a regular lechon.😆 Thank you Weee for making it so easy for us to try cochinillo for the very first time, sa America pa! 😆👍🏼👍🏼

Cochinillo, or roast suckling pig, is a delightful Filipino dish perfect for any occasion. Cochinillo is a piglet, approximately three weeks old and is exclusively breastfed. Its meat is incredibly TENDER, with a BUTTERY, MILKY flavor that's simply irresistible. Despite its richness, the layer of fat beneath the skin is thin. Our Cochinillo is already marinated and ready to cook, perfect to be enjoyed during celebrations and feasts.

Cochinillo Cooking Instructions:

1. Thaw before cooking

2. Pat with paper towel until completely dry.

3. Place suckling pig on its belly, skin side up in a roasting pan.

4. Cover ears, hooves and tail with aluminum foil.

5. Put suckling pig into pre-heated oven at 375°F and roast for about 2 to 3 hours, until internal temp reaches 165°F.

6. Increase temperature to 450°F and cook for 30 minutes or until skin gets a bit crispy.

7. Remove from oven and let rest for 15 minutes before serving.

There are two ways you may position the suckling pig in the oven. The most common way is to position the piglet flat if the oven space permits it. The other way is to position the piglet diagonally. Photos below for reference:
