Handpulled Gamtae Noodle Cooking Tips
1.  Bring about 4 cups of water to boil, put in 100g of Gamtae Noodle and boil for 15 to 18 minutes.
2. Lightly wash the noodles a couple of times in warm water and drain.

Description

Tasty colorfully green udon noodles loaded with Badasoop handpulled gamtae from master artisan Song Cheolsu.  It took several attempts to get the right consistency of udon noodles and add as much gamtae as possible.  If you look closely, the gamtae is embedded like dots in the noodles. 

The number 32 in the name holds the secret to the noodles' super elasticity – it takes a whopping 32 hours to make them using a slow-drying process.  The trick is to let the noodles age over time, rather than drying them quickly at high temperatures.  In the process, density and elasticity increase as the space where water droplets were in the noodle decreases.  And it doesn’t end there.  Taking into consideration the temperature, humidity, and weather of the day, the aging process is repeated 8 times.  Because they are made by a master artisan, you get noodles with a firmer and chewier texture that are easier to digest and that don’t have that flour smell.  To feel the gamtae flavor more abundantly, try the noodles as a cold udon.  The unique subtle green udon noodles will make any dish more elegant so try them in your favorite recipes.
