Shiraegi miso soup is made by simmering Korean radish sprouts with bone broth and miso paste.
The Korean radish shiraegi is blanched once to soften its texture and cut into bite-sized pieces to bring out the original flavor and taste of the radish shiraegi.
The selected beef bones were simmered for 10 hours to make a rich beef bone broth, which was then simmered with two types of miso in a golden ratio.
