Our special Hot Pepper Paste Yellow Corvina(Gochujang-Gulbi) is made by drying fresh yellow croaker caught every spring from March to May when the humidity is the lowest and the temperature is low enough for proper drying, then seasoning it with delicious gochujang after thoroughly drying from April to June and again from October to December. After marinating for about a month, it is seasoned again in a new hot pepper paste(gochujang) for another month, and finally, it is placed in a container and stored in a cool refrigerator. This processed food with hairtail meat has been passed down as a delicacy for wealthy households or as a side dish for a long time.
