The Kojiya Honten Dried Barley Koji uses barley sourced from Kyushu and is carefully cultivated with malt mold to produce high-quality dried malt flakes. Although dry, it retains strong enzymatic power comparable to raw malt thanks to strict temperature and quality control during processing.
One 350 g bag can be rehydrated with 150 ml of warm water at 50°C to produce approximately 500 g (17.6 oz) of malt, suitable for making malt salt, malt miso, maritime miso, soy sauce malt, and other traditional fermented foods.
