Marusho is a highly regarded traditional Japanese vinegar brewery that was established in 1879 in the Wakayama prefecture. Now operated by the fourth generation of the master-brewing family, Marusho is renowned worldwide for its natural fermentation of rice vinegars, which takes place in large Kumano cedarwood vats for periods ranging from 90 to 500 days. These fermentation vats are named after famous sumo wrestlers, adding a unique cultural touch to the process.
The use of Kumano cedar barrels imparts a distinct flavor to Marusho's rice vinegar. The vinegar is lightly seasoned with amazake and mirin, giving it a subtle sweetness while maintaining a clean and crisp profile. The brewery also utilizes abundant, sacred spring water from the Kumano mountains—the same source as Japan's tallest single-drop waterfall, Nachi Falls—to create completely additive-free, all-natural vinegars that possess unmatched depth and complexity.
Jun Komezu, also known as Jun Kome Su, translates literally to "pure rice vinegar." Unlike standard commercial rice vinegars, which may contain blends of other grains, starches, or alcohol, a vinegar labeled as Jun Komezu must be brewed exclusively from 100% pure rice.
