Master Laver (Gim) Crisps

Bugak, a traditional Korean food of fried foods, has been transformed into great daily snacks and anju (food that accompanies drinking). The bugak, or crisps, are fried in brown rice oil coated in glutinous rice paste. And because they are prepared hygienically, they make a great children’s snack. The curry-flavored kelp crisps are made with the traditional know-how of Korea Grand Master Oh Hee-Sook.

Making bugak is quite time-consuming. To describe the process in a nutshell, first discern the seasonal ingredients, season, and boil, if deemed necessary. The glutinous rice paste to coat the ingredients needs to be prepared, stirring with a wooden spatula. It’s best to make bugak on a sunny day, as they need to be dried in the sun completely for a day before they are fried. When the prepared ingredients are dropped into the hot oil, the glutinous rice paste pops up white, making it crispy and delicious. Enjoy the crisps carefully made with the secret recipe by the grand master with all members of the family.
