There's no need to go to the trouble of making kelp stock; simply pour this sushi vinegar over warm rice and mix to create kelp-flavored sushi rice. It's also suitable for chirashi-zushi (sushi with sushi rice) and hand-rolled sushi, and is convenient for use in dishes other than sushi. The recommended recommended usage is to mix 2 tablespoons (approximately 30mL) with approximately 320g of warm rice (1 cup of rice).
