We use 100% raw nori seaweed mainly from the beaches of the Ise and Mikawa regions, and have made the most of the original flavor and texture of the ingredients. We have created a mellow, rich, natural taste.
Momoya's "Raw Nori [Nori Tsukudani]" is a nori tsukudani made from 100% Japanese green nori seaweed (mainly from Ise Bay and Mikawa Bay) that makes the most of the flavor of the ingredients. We do not use any chemical seasonings, but add the flavor of bonito stock extracted in-house, and reduce salt to create a mellow taste. By shortening the simmering time as much as possible, we have preserved the unique aroma and soft texture of freshly harvested raw nori. The seaweed is carefully selected so as not to damage the shape of the long leaves of green nori, and the elegant seashore aroma and natural sweetness spread throughout the dish. It is a dish that allows you to enjoy the original deliciousness of the ingredients, and is easy to use in a variety of dishes, as well as a side dish for rice.
