Details: 'Kojiya Satomura'' Kohsei Foods' premium dry rice koji is a special rice malt made by Japan’s No. 1 malted rice maker and is the same rice from the No. 1 amazake producer on Japan’s Rakuten. Dry rice koji has many uses including creating probiotic and nutritious foods and beverages. Rice koji naturally has Aspergillus oryzae and is the base ingredient for miso, sake, soju / sochu, soy sauce, and mirin just for starters. ''Kojiya Satomura'' (Kohsei Foods) is a pioneer in the research and development and manufacturing of premium quality rice koji. Using 100% natural Japanese rice and manufactured in the moisturerich region of Gifu Prefecture, it has been developed to easily make koji water and amazake. Koji water is often drunk as a daily healthy beverage in Japan and contains 100 strains of rice koji enzymes. Koji water has a slight natural sweetness and can be mixed with your favorite beverage, such as lemon or lime juice, yuzu, soy milk, or fruit vinegars. You can also drink it straight or over ice. Rice water is also k n to be a beauty supplement and is said to have skin brightening properties. Put it in a spray bottle and use it as a toner on your face and body (check a small part of your skin first to ensure you have no allergic reactions). Koji water is easily made by 1) soaking dried rice koji in hot water at 60 degrees Celsius / 140 degrees Fahrenheit for 1 hour to activate the enzymatic activity then store it in your refrigerator for 78 hours. Two recipes: 1) Amazake k n as fermented rice milk or ''sweet sake'' and 2) ''salt koji,'' a popular marinade and umami flavor enhancer are included with each purchase. In addition to amazake and salt koji, dry rice koji has endless uses including for making sake, miso, vinegar, pickles (tsukemono), soy sauce, shochu / soju, and awamori.
