Non-fried noodles made with Yamadai's unique manufacturing method.
The noodles have a smooth surface and a glutinous texture on the inside, and do not easily stretch over time.
The soy sauce broth is based on honjozo dark soy sauce and re-finished soy sauce, and contains several kinds of meat extracts to give it a complex flavor and richness.
A large amount of back fat is added for richness, and garlic and a small amount of spices are added for a punchy taste.
