Shiping Puffed Tofu Cubes is a specialty delicacy hailing from Shiping, Yunnan Province.
• Origin Background
Nestled on the banks of the Red River in southern Yunnan, Shiping saw its local tofu granted Geographical Indication Product Protection in 2012. In 2017, the craftsmanship of making Shiping tofu was included in the list of Yunnan Provincial Intangible Cultural Heritage.
• Production Craftsmanship
It is made from high-quality local soybeans through more than ten meticulous procedures, including soaking, grinding, boiling, and straining. What sets it apart is the use of natural underground "sour brine" indigenous to the region for curdling. Afterward, it undergoes processes like frying. Notably, three catties of raw tofu are condensed into just one catty of dried tofu cubes.
• Texture & Flavor Characteristics
It boasts a cloud-like delicate texture with a perfect hint of chewiness, along with a rich, mellow soybean aroma. Free from the fishy and astringent taste common to traditional soybean products, it delivers a savory and satisfying chew with every bite.

It is high in protein content, approximately twice that of eggs, making it an excellent source of plant-based protein.
