Soukensha's Echizen Little Kyoto Organic Junmai Vinegar (500ml) is made with organically grown domestic rice and carefully brewed using the traditional cold-brewing, three-stage brewing method. It is then slowly fermented over approximately six months using the traditional static fermentation method using the brewery's own acetic acid bacteria. The brewing water is "Okimizu," a natural underground spring water from Ono City, Fukui Prefecture, also selected as one of Japan's 100 famous waters. Its mellow, refreshing taste, clean acidity, and gorgeous aroma are characteristic of this vinegar.
