The Labor-Intensive Process of Organic Plum Concentrate
The production of plum concentrate is time-consuming and labor-intensive. Only green plums that are 50-60% ripe are selected, washed, crushed, and juiced. Then, they are simmered for 30 to 48 hours. For the first 10 hours, high heat is used, followed by low heat with constant stirring. The plum concentrate must be carefully monitored, and it is only ready once the concentrate can be pulled into continuous threads.
