Noodles and Craftsmanship

This product is designed with health in mind, without any additives, colorants, or chemical seasonings, creating a health-conscious product.

【Commitment to the Noodles】

We use a traditional method from the Taisho era (cutting fresh noodles and drying them like somen). The shape of the noodles during drying is patented as "Torishi Kake" unique to Torishi Store.

The ingredients are high-quality wheat flour, salt, and delicious underground water from the Ukiha region in Fukuoka.

Craftsmen adjust the temperature and humidity while carefully observing the noodle state and weather conditions, allowing it to mature and dry for three days (approximately 60 hours).

After the noodles are fully matured, they are checked for dryness and individually removed from the drying racks, resulting in noodles with a natural wheat aroma, rich flavor, and firm texture.

【Commitment to the Soup】

The soup uses domestically grown lemons from Setouchi, Ehime, giving it a rich fragrance and refreshing sourness, with a clean taste.

The natural fruit juice-based sauce, combined with noodles made from domestically produced wheat flour, and topped with various vegetables, makes it a very delicious dish.
