Tonghai Jiulongchi Doumo Tang is a traditional characteristic dessert from Tonghai County, Yunnan Province. Here is its detailed introduction:
Historical Origin
It is said that Doumo Tang was created by the Mongol iron cavalry. Its prototype was a block-shaped food made by mixing highland barley, soybean flour and brown sugar during the Mongol army's march. In 1252 AD, Kublai Khan, Emperor Shizu of the Yuan Dynasty, launched a southern expedition, and this candy was introduced to Tonghai. Mass production began in Jiulong Town of the former Hexi County in the mid-Qing Dynasty, with a history of more than 750 years to date.
Production Process
Taking maltose, soybeans, broad beans, white granulated sugar and vegetable oil as the main raw materials, it may or may not be added with Pu'er tea, green tea, fruit powder, coffee, etc. It is refined through traditional processes such as sugar boiling, pulling and whitening, powder wrapping, strip drawing, cutting, cooling and packaging.
