Introduction to Yunnan Rose Preserved Turnip
Yunnan Rose Preserved Turnip is a famous specialty of Yunnan, boasting a long history and unique flavor. Here is a detailed introduction:
• Historical Origin: First created in the late Ming and early Qing dynasties, it was developed by Yongxiangzhai Sauce Garden, the predecessor of Kunming Tuodong Condiment Food Co., Ltd. In the sixth year of the Tongzhi reign of the Qing Dynasty, Yongchungong switched to the pickled vegetable business at Sanpaifang in Kunming. The Rose Preserved Turnip he produced became renowned for a time, earning the reputation of "the First Brand in Ancient Yunnan".
• Production Process: Using fresh mustard greens as raw materials, after peeling and cutting into pieces, they are pickled three times with Mohei salt. Then, maltose and brown sugar are boiled into caramel color and syrup, mixed with old white sauce, fermented sauce, rose syrup, etc., to make a sauce. The mustard pieces are soaked in the sauce pool for 70-80 days, dried in the sun after being taken out of the pool, and then sealed in jars for fermentation for 3 months to finish.
• Flavor Characteristics: It has a shiny black skin and a reddish-brown core, with a rich sauce aroma and a pleasant rose scent. It tastes crisp, tender and delicious, salty with a sweet aftertaste.
• Edible Methods: It can be sliced and eaten raw directly, or shredded and stir-fried with minced meat, green and red peppers to make "Heisan Duo" (a classic Yunnan dish of stir-fried shredded preserved turnip, minced meat and chili). It can also be used for cold dishes, soup cooking, or as a condiment for cold noodles and cold rice noodles.
• Honors and Awards: In 1915, it won the first prize at the Panama-Pacific International Exposition, and has won awards at many expositions inside and outside Yunnan Province. It is an important business card of Yunnan cuisine culture.
