 Raw Material Selection

 Ham: High-quality Xuanwei local ham is selected, mostly made from plateau Wujin pigs that have been free-range for 300 days. After 24 months of low-temperature fermentation and manual curing, only the meat from the middle part of the whole ham is taken. It has a bright color, a combination of fat and lean meat, a salty and fragrant taste with a sweet aftertaste.

 Glutinous Rice: Northeast Wuchang glutinous rice or Anhui Jiucheng glutinous rice is used. It is produced once a year. The grains are plump. It is soaked at a high temperature or in the stock of chicken drumsticks and pig bones for a long time, being soft, glutinous and fragrant, and absorbing the flavor of the ham and the stock.

 Zongzi Leaves: The Indocalamus leaves at an altitude of 800 meters are used, or the Indocalamus latifolius in the alpine primeval forest. It is produced only once a year, and its fragrance is refreshing and adds a unique natural aroma to the zongzi.

 Production Process: Following the traditional process, it is carefully made through multiple procedures. The ham is first soaked and then fried in oil to fully stimulate the meat flavor.
