Bicol Express

Love spicy food? Bicol Express will absolutely win your heart! This dish originates in Bicol Region of the Philippines, which is known for cooking foods in “gata” or coconut cream and lots of chilies. 

 

Bicol Express is a type of stew that makes use of coconut milk and coconut cream. Pork is traditionally the meat used for this dish, especially the fatty parts such as pork belly and shoulder.

Bicol Express is made by boiling your protein in coconut milk, along with chilies and spices. This flavorful spicy dish is best eaten with rice to balance the heat from the chilies.

What You Need: 

2 lbs. Pork Belly (cubed)
1 cup Coconut Cream

14 pcs. Thai Chili (minced)

1 pc. Onion (thinly sliced)

4 cloves Garlic (minced)

2 tbsp. Bagoong Alamang

1 1/5 cup Coconut Milk

1 cup Water

4 pcs. Long Green Chilies, sliced

1 tsp. Cooking Oil

Salt and Pepper to taste

 

 

 

 

Instructions

1) Over medium heat, sauté onions and garlic until browned.

2) Add your pork until lightly browned.

3) Add Bagoong Alamang and stir well, for about 1 to 2 minutes.

4) Add coconut milk, water, and chili peppers.

5) Cover the pot, and simmer for about 35 to 35 minutes or until pork is tender and liquid is reduced and begins to render fat.

6) Add Long Green Chilies and stirring regularly, for about 1 to 2 minutes.

7) Pour in your coconut cream and simmer until desired consistency.

8) Serve and enjoy!

Bicol Express is really EASY to make! You can make it less spicy by simply reducing the amount of chilies added, and it will still taste delicious and flavorful.
