This is my favorite type of vermicelli, since the glass noodle consistency of mung bean noodles is deliciously chewy and great for making ants climbing a tree (spicy vermicelli with pork). I also love adding this to stews. I made the mistake of buying rice vermicelli before realizing the difference - rice noodles become soft and not as chewy, which is good for other uses but not as satisfying for this particular dish. I would definitely recommend this product and recipe!
