This tea cake is crafted from the fresh leaves of the large-leaf Shuixian tea cultivar, harvested at the semi-open leaf stage from high mountains exceeding 800 meters in elevation in Zhongcun 中村, Shuangyang Town 双洋镇, Zhangping City. Zhongcun is not only the birthplace of Zhangping Shuixian tea cakes but also its core production area. Nestled in a long and narrow valley, it boasts a typical ecological environment conducive to producing exceptional tea, characterized by lingering mist and clouds, clear streams, and lush forests. The tall trees provide shade and wind protection for the Shuixian tea bushes, while the diffused light created by the mist promotes the accumulation of amino acids, proteins, and other nutritional components. The loose, well-aerated soil and thick layer of humus offer ample nutrients, laying a solid foundation for the tea's aroma and taste.

The entire production process meticulously adheres to the traditional Southern Fujian oolong deep fermentation techniques that have been practiced since the 1980s. It involves over twenty intricate steps, including sun-withering, indoor-withering, five rounds of shaking, pot-fermentation, kill-green, kneading, hand-pressing, and slow-baking over lychee wood charcoal. The overnight tea-making process, extending from 5 PM to 3-5 AM, demands immense physical stamina, experience, and patience from the tea masters. The finished tea cakes are square and pillow-shaped, exhibiting a dark brown hue with a sandy green undertone and oily red edges.
