1st & 2nd Layers – Room 501: Cookies for Late Nights (4 types)
Fermented Butter, Earl Grey, Almond, Chocolate & Cacao Nibs
Fermented Butter:
Made with Hokkaido wheat flour and fermented butter for a rich aroma and flavor. The deep, mellow taste of the butter is enhanced with a touch of salt, leaving a savory finish that lingers.
Earl Grey:
Blended with plenty of Earl Grey tea leaves, this cookie is crafted with Hokkaido flour and butter. By infusing black tea into fresh cream, it creates a luxurious milk tea-like aftertaste.
Chocolate & Cacao Nibs:
A rich and slightly bitter cookie made with nutty-flavored chocolate, Hokkaido wheat, and butter. Crunchy cacao nibs add a hint of bitterness and a variety of textures and flavors.
Almond:
Made with Hokkaido wheat and butter, the dough is kneaded with skin-on almonds for a crisp, light texture and a fragrant, nutty flavor.
3rd Layer – Room 302: Florentine Eaten by the Artist and Squirrel at the Window
A crispy cookie base made with Hokkaido butter, topped with caramel mixed with almonds. A hint of citrus in the caramel enhances the rich aroma and depth of the almonds and caramel.
4th Layer (Bottom) – Room 201: Boules de Neige on a Snowless Day
Shaped like little snowballs, these cookies are made with Hokkaido wheat, butter, and a generous amount of almond powder. They melt gently in the mouth with a delicate texture, leaving a soft, lingering almond finish.
