Bugak was historically enjoyed by Korean royalty and developed by the royal court as a way to preserve fresh ingredients past their peak seasons. The vegetables would be thinly sliced, coated in glutinous rice paste, let out to dry, and then stored in a cool dry place. When winter came about or when food was scarce, the bugak was pulled out of storage and then fried so people could enjoy the flavors and seasonal ingredients again.

Oh He Sook (OHS), the producer of these Bugak crisps, is the daughter-in-law of fourth generation Korean nobility. She still uses the same traditional methods as her predecessors; food masters carefully selecting the ingredients and then using only sun and wind for an all natural drying process. It’s within this drying process where the secret of the exceptionally crisp and light crunch lies, allowing for the original texture and flavor of the vegetable to shine through.
