Introduction to the Signature Yun Ham Zongzi of Jiahua in Yunnan

 Raw Material Selection

 Ham: High-quality Xuanwei local ham is selected, mostly made from plateau Wujin pigs that have been free-range for 300 days. After 24 months of low-temperature fermentation and manual curing, only the meat from the middle part of the whole ham is taken. It has a bright color, a combination of fat and lean meat, a salty and fragrant taste with a sweet aftertaste.

 Glutinous Rice: Northeast Wuchang glutinous rice or Anhui Jiucheng glutinous rice is used. It is produced once a year. The grains are plump. It is soaked at a high temperature or in the stock of chicken drumsticks and pig bones for a long time, being soft, glutinous and fragrant, and absorbing the flavor of the ham and the stock.

 Zongzi Leaves: The Indocalamus leaves at an altitude of 800 meters are used, or the Indocalamus latifolius in the alpine primeval forest. It is produced only once a year, and its fragrance is refreshing and adds a unique natural aroma to the zongzi.

 Production Process: Following the traditional process, it is carefully made through multiple procedures. The ham is first soaked and then fried in oil to fully stimulate the meat flavor. After the glutinous rice is soaked at a high temperature or in the stock, it is filled with large pieces of ham and steamed in the hot and rich stock of pig bones, sublimating its original mellow fragrance.

 Taste and Flavor: The Yun Ham Zongzi has a rich taste with distinct layers. When you take a bite, it is oily, fragrant and delicious. You can eat large pieces of solid ham meat. The meat is tender, oily but not greasy, and the smoked flavor is strong. Its grease blends into the glutinous rice grains that are distinct, translucent, soft, glutinous and chewy, perfectly combining with the fresh and fragrant flavor of the ham.
