Sugar onion pancakes. A piece of white flour pastry, wrapped around what looks like an accordion-style scallion and coconut shreds. Take a bite, first there is a crispy texture, then chewing releases a sweet, fragrant flavor.

The "scallion" is actually made from sugar. The sugar is cooked to 120°C, then slightly cooled. Using a stick, the sugar is continuously pulled and stretched, just like pulling dough into noodles.
Once fully cooled, it forms into hollow, tube-shaped pieces that are then cut into segments. Due to its resemblance to white scallion, it is called "scallion."

It is said that a well-made scallion should have 14 large holes, with 16 smaller holes surrounding each large one, totaling over 200 holes.
There are indications that scallion has existed since the Qing Dynasty, but there are also rumors that the origin is from Taiwan during the Japanese occupation. Allegedly, the Japanese government at the time wanted to transport all the sugarcane produced in Taiwan back to Japan, so the sugar factory workers turned the sugarcane into scallion candies to avoid detection.

Fried scallion cakes were a common, affordable snack for Hong Kong children 40-50 years ago. Street vendors used to carry transparent metal boxes and hawk them everywhere, making them easily accessible.
But today, finding a fried scallion cake has become quite difficult. Not only are there fewer master craftsmen who can make the scallion, there are also fewer people who appreciate this traditional folk snack. Plus, the vendors often struggle to stay in business.
