Okonomiyaki, literally "what you like" (okonomi) + “grilled” (yaki) although sometimes called “Japanese pizza,” is a communal, savory, grilled pancake and is one of Japan’s most iconic dishes.
A variety of ingredients, usually vegetables such as cabbage and protein such as pork or seafood, are mixed in a batter and cooked on a griddle like a pancake before being topped with okonomiyaki sauce (similar to a thick Worcestershire sauce), Japanese mayonnaise, katsuobushi (bonito/skipjack tuna) flakes, aonori (seaweed flakes), and pickled red ginger. The ingredients and toppings can vary depending on the region and local ingredients with many locals take great pride in their hometown version, playfully competing with others on who makes the “best” okonomiyaki.
This gluten-free, vegan mix is uniquely made with rice and chickpea flower by Sakurai Foods. How to use: Combine the okonomiyaki mix with 140ml of water. Mix until smooth. Add your favorite vegetables and cooked protein. Mix to combine well. Cook on in a frying pan or on a griddle on medium heat, flipping once until both sides are light brown (about 4 mins per side). Serve hot with okonomiyaki sauce and any of your favorite toppings, and be sure to enjoy with family and friends!
