"Komomo" Jelly: A Jelly Filled with the Passion of Local Aichi Peach Farmers
To produce large, magnificent peaches, approximately 80% of the young fruits are thinned out.
The previous generation heard from local peach farmers that "each young fruit, carefully cultivated with great care, is as precious as one's own child," and repeatedly experimented to see if they could be made into a delicious confection. After two years, they finally succeeded in creating a product that, despite its small size, has a distinct peach flavor by being preserved in syrup using their unique method.
The "Komomo" (young peaches) thinned out this spring are preserved in syrup for over 100 days using their unique method. A whole "Komomo," softened to the core and with a perfect balance of sweetness and tartness, is placed inside the jelly, enclosing the syrup infused with the essence of the "Komomo," resulting in a refreshing and light-tasting summer treat.
