Details: Use this all natural roasted rice bran from Japan to start a Nukadoko (reusable rice bran pickling environment) to make Tsukemono (Japanese pickles) and Nukazuke (fermented Japanese foods).
How to start a rice bran pickling bed (nukadoko): Mix one bag (650 g) of roasted rice bran with 1000 ml (4.25 cups) of hot or warm water, 200 grams (~11 tablespoons) of salt. Dried kelp or dried chili peppers can be added for additional flavor. Stir the pickling mixture once a day with clean hands. Add vegetables to the bottom of your mixture and mix. Experiment pickling vegetables for between 6 - 24 hours If the mixture gets too wet, you may use a paper towel to remove the water or add more rice bran and salt to taste.
Tips for pickling ...
Cucumbers: due to its high water content, rub whole cucumber with just a little salt before placing into the pickling bed. Pickling time is 6-12 hours.
Eggplant: divide a long eggplant into two or four pieces and pickle for 6-24 hours.
Try experimenting with daikon radish, turnips, carrots, and other root vegetables.
