Enjoy this chewy, gently sweet anko mochi—a comforting pairing of chewy rice cake and smooth red bean paste.
Crafted by Echigo Shiratama, a Niigata-based maker specializing in rice-based confections that blend traditional techniques with a modern touch, this simple yet satisfying treat is easy to prepare—just warm in the microwave using a mug. The tender texture of shiratama (rice flour dumpling) mochi pairs beautifully with sweet anko.
You can also dilute the final product with hot water for a soothing bowl of oshiruko, or sweet red bean soup. A traditional confection that offers classic Japanese flavor, perfect for the cooler months.
Directions (One Serving):
1. Place the shiratama mochi in a heat-resistant container, then add 120 ml of water.
2. Heat in the microwave at 500W for 2 minutes – 2 minutes 30 seconds.
3. Transfer to cool water briefly to chill.
4. Place the shiratama mochi in a bowl, and pour the included anko paste on top.
