These large, wrinkled, dried red chili peppers are used to add a piquant flavor to dishes.

Bydagi chili is well known in the state of Karnataka and has a medium hotness.

The spiciness can be altered by removing some of the seeds. Red chilies, whole or crushed, are used in dals, curries and soups. Chilies are usually fried in oil/ghee with other spices and added to dishes as a final flavoring.
