Tsuyu is a Japanese-style sauce made from kelp and katsuobushi in a dashi broth with just the right amount of soy sauce.
This time, Korean food veterans Mija Onine have perfected their Seoul-style tsuyu to suit the Korean palate.
It's cleanly flavoured with carefully selected ingredients, including domestic dried shrimp, dried anchovies, and shiitake mushrooms, as well as katsuobushi, so it's easy to use as a dipping sauce on its own.
