Organic high mountain chrysanthemum comes from the Desen Organic Farm on the Sixty Stone Mountain in Hualien Taiwan. Mr. Huang Desen, the owner of the farm, is the first organic farmer to grow chrysanthemum on the Sixty Stone Mountain. Since 1998, Mr. Huang has been cultivating chrysanthemum organically without pesticides on the two acres of land beside his house. He dries the chrysanthemum naturally, without adding any chemical additives. However, the income from dried chrysanthemum is barely enough to cover the wages for weeding. He admitted, "In the early days, I used the income from the homestay to support this organic field, but at least I earned health." For Mr. Huang, who suffered from severe allergies and had no access to medical treatment, "health is priceless" is a profound experience. Having suffered from allergies, he observed that his allergies worsened after spraying pesticides or processing dried chrysanthemum, so he made the decision to stop using pesticides and sulfur in processing.

Two Years of Research Resulted in Sulfur-Free Peace of Mind Chrysanthemum

How can chrysanthemum be preserved without sulfur? It took Mr. Huang Desen two years to find the answer. When the organic chrysanthemum harvest began in 1998, he conducted experiments and recorded results every day. Some were dried indoors after a few hours of sun exposure; some were directly dried in the furnace, and some were alternately dried and sun-dried. He found that sun-drying would cause a change in flavor because the enzymes would continue to act. After ruling out sun-drying, he studied the temperature and humidity of baking, how to dry the chrysanthemum inside and out without it becoming too brittle from excessive heat. This problem was not resolved until the autumn harvest in 2000.

Going Organic to Preserve the Green Mountains and Clear Waters of Hometown

Now, not only does Mr. Huang Desen encourage his team to switch to organic farming in his chrysanthemum production and sales team, but he also shares the techniques of organic chrysanthemum production and processing with the indigenous people on the other side of the mountain. He hopes that everyone can live healthier and happier lives, and that the hometown can maintain its green mountains and clear waters.
