• Historical Origin: Its origin dates back to the 26th year of the Guangxu reign of the Qing Dynasty (1900). Liu Peisen from Tuzhu Street in Qujing accidentally dropped chives flowers into the kohlrabi shreds he was drying. After mixed pickling, the taste was surprisingly good. He adjusted the formula and founded the "Hengmeizhai" Sauce Garden. In 1928, this chives flower product won the gold medal at the Panama-Pacific International Exposition.
• Ingredient Selection: Tender chives flowers (half with seeds and half in bloom) are picked from July to August of the lunar calendar. For kohlrabi, cylindrical varieties are chosen; after peeling, they are cut into shreds as thin as matchsticks. Chilies are deseeded and cut into sections to ensure the quality and taste of the ingredients.
• Production Process: Chives flowers are rinsed three times with clean water and air-dried until 70% dry. Brown sugar is melted with grain wine of over 50 degrees alcohol, then fully mixed with kohlrabi shreds to moisten them. Next, add chives flowers, chilies, and refined salt, stir well, and pack into clay pots, pressing layer by layer. Seal the pots with lotus leaves and yellow mud; in the first three months, open and stir the contents once a month, then store in a constant-temperature cellar for about half a year to allow full saccharification and fermentation.
