• Historical Origin: Its origin dates back to the 26th year of the Guangxu reign of the Qing Dynasty (1900). Liu Peisen from Tuzhu Street in Qujing accidentally dropped chives flowers into the kohlrabi shreds he was drying. After mixed pickling, the taste was surprisingly good. He adjusted the formula and founded the "Hengmeizhai" Sauce Garden. In 1928, this chives flower product won the gold medal at the Panama-Pacific International Exposition.

• Ingredient Selection: Tender chives flowers (half with seeds and half in bloom) are picked from July to August of the lunar calendar. For kohlrabi, cylindrical varieties are chosen; after peeling, they are cut into shreds as thin as matchsticks.
