Place the rice cakes onto a foil or parchment paper-lined baking sheet and roast for 10 minutes, or until the surface is puffy and cracked. Remove and set aside. Heat a medium-sized pot over medium heat and add the cooking oil. When the oil is hot, add the diced red onion and stir-fry until fragrant (a minute or two). Add the diced carrots and daikon and stir-fry for an additional minute. Add enough water to just cover the ingredients. Bring the soup to a boil. Once boiling, turn the heat down to low. Mix the miso paste and 2 Tbsp water in a small bowl, until no lumps remain. Add the miso-water mixture to the soup. Simmer the soup for 10 minutes, and then add the shiitake mushrooms to the soup. Continue to simmer for another 20 minutes, until the vegetables are tender. Taste the soup and adjust seasonings, if needed. Pour the soup and some vegetables into serving bowls. Add a few rice cakes to each bowl and garnish with green onions. Serve hot and enjoy!
