I’ve always been a fan of tofu skin, one of my favorites, but I’m not too comfortable with the amount of fat in this dish. The fat isn’t smooth—it has a cotton-like texture, which I find unpleasant. If I have the time, I try to carefully remove it. Ideally, they should use less fat and add more mushrooms or bamboo shoots instead. I would give it 0 stars for the fat, but without it, the dish would easily be a 3+ star rating.
