Macapuno is considered a delicacy in the Philippines. Macapuno forms from a natural process in coconuts that leaves them with jelly-like flesh and no coconut water. This results in a delicate texture that is cut into shreds and used as a topping for many Filipino desserts such as Halo-Halo and even turned into delicious candies.
