What is Pichi Pichi?
Pichi-pichi or pitsi pitsi is a Filipino snack or dessert made from cassava (kamoteng kahoy), water, sugar and lye.
It originated from the province of Quezon.
This slightly translucent and gelatinous delicacy is so easy to make. The cassava is first peeled, grated and washed. The grated cassava is then mixed with water, sugar and lye, transferred into pans or molds. At this point, some add different food colorings or flavor extracts to the mixture for a more colorful treat.
The gelatinous and smooth texture, along with its slightly sweet taste, are well complemented by the rough texture and milky taste of the freshly grated coconut or rehydrated desiccated coconut.
The grated cheese gives a slightly salty and creamy taste which balances this slightly sweet and soft delicacy. The fragrant latik gives a native touch, with its distinct sweet and caramelized flavor, and chewy texture.
