Jai - This is the noodle closest to what my family uses for Jai, so took a chance and purchased it. The noodles are great! They don't break apart easily, even a day later.

Pure Mung bean thread, no other extra ingredients. Second time I purchased. Very good with hot pot!

These are real no carb mung bean noodles. Pretty expensive but worth it for diabetics
