This domestically produced nametake mushroom is made using 100% Shinshu Enoki mushrooms and is produced in Nakano City, Nagano Prefecture, a region famous for its Enoki mushrooms.
It is cooked using honjozo soy sauce and hon mirin, which are known for their deep flavor and richness, and only brown sugar, which is sweeter than refined sugar. Dried small sardines and kelp are also added to seal in the umami of the sea.
