It is naturally brewed and aged for over a year in a cedar wooden barrel, a tradition dating back to the Meiji era. Fermentation in a wooden barrel inhabited by over 300 strains of our own proprietary yeast and lactic acid bacteria creates a deep, rich aroma and mellow flavor.
