This was my first time trying calamansi ever. I so wanted to like it but to me it has a strange aftertaste that is reminiscent of biting into the bitter pith of grapefruit. Full disclosure, I don't like grapefruit so I should have done my research before buying this. I assumed it would taste like limes, which it does to a degree, until that bitterness kicks in. I might be able to redeem it in a marinade some day. I haven't been exposed to enough Filipino cuisine so I'll be working on that before I touch this stuff again.
