Specially Selected Flavor Ingredients and Manufacturing Method
Mainichi Dashi's flavor ingredients are all sourced in Japan, including bonito flakes from Makurazaki, Kagoshima Prefecture, Japan's top producer of bonito flakes, and makonbu from Hokkaido. We also pay particular attention to our manufacturing method. All flavor ingredients are dried to a moisture content of 5% to eliminate any fishy odor and concentrate the umami. Furthermore, our bonito flakes, brown jack tuna flakes, mackerel flakes, and mullet flakes are shaved and then finely crushed again using an elaborate manufacturing process to maximize the umami extract from the dashi.
How to Use Powdered Dashi
The recommended amount is about 2 teaspoons per 250cc of hot or cold water. For one serving of miso soup, use 1-2 teaspoons.
