Shiino Foods' "Katsuo Shukasu 250g" is a traditional salted dish made by long-term salting and fermenting only the stomach and intestines, which are rare parts of bonito. Only 30 to 40g of this part can be obtained from one bonito, and it is characterized by its deep flavor and richness that is unique to fermented foods. It is rich in natural umami ingredients and amino acids, and can be used as a snack with alcohol, as well as an accent or secret ingredient in various dishes such as hot rice, tofu, pasta, pizza, and cream cheese, as a "Japanese anchovy."
