This is one of my favorite fish on Wee. It’s boneless and easy to cook.

Baked in olive oil, it tastes like fish crackers, and the kids love it. It's boneless and meaty, which is great.

Yellow Croaker and Tofu Soup (Creamy White) A delicious and nutritious home-style soup with a light, creamy white color. Ingredients (serves approximately 4): • 8 boneless small yellow croakers • 1 block of soft tofu (cut into small cubes) • 3–4 slices of ginger • Salt to taste • White pepper to taste • Cornstarch (corn starch or cornstarch) to taste • A pinch of cooking oil Instructions 1. Prepare the yellow croaker • Rinse and dry 8 boneless small yellow croakers. • Dry 4 of the croakers and set aside immediately. • Dry the remaining 4 fish and lightly pat them with cornstarch. 2. Pan-fry the fish to release the flavor • Heat a small amount of oil in a pan and pan-fry the 4 fish not coated with cornstarch until lightly golden and slightly dry. 3. Make the Soup • Add enough water to a pot, add the fried yellow croaker and ginger slices, and bring to a boil over high heat. • The soup will quickly turn a milky white. 4. Add the Tofu and Fish • Add the chopped tofu first, stirring gently to prevent it from breaking. • Add the four fish coated in cornstarch and keep the soup simmering but not boiling. 5. Season • Season with salt and white pepper as needed. • Cook until the fish is cooked through and the tofu is well-seasoned. Tips • After frying the fish, thoroughly dry it to ensure a thicker and whiter soup. • The cornstarch will tenderize the fish and prevent it from falling apart. • Garnish with chopped green onions or cilantro if desired.
