- These are mung bean noodles with a pleasantly chewy and soft texture. This is a product from Taiwan, and I simply cannot switch to any other brand. They can be used in both soups and stir-fries, and the noodles still retain their great taste and texture. (Note: The Thai translation reflects this.)
