Our Commitment to Noodles

Since our establishment in 1918, we have been making noodles in the traditional way (cutting fresh noodles and drying them as if they were somen noodles).


The shape of the noodles when dried has been registered as Torishi-shoten's original Torishi-kake design.

The ingredients used are high quality wheat flour, salt, and delicious groundwater from the Ukiba region of Fukuoka.

The noodles are then dried slowly over a period of three days (about 60 hours) by craftsmen who compare the shape of the noodle with the weather conditions and adjust the temperature and humidity.

The noodles are then matured and dried.

The matured noodles are removed from the drying table one by one while checking the state of dryness, and are finished with the original aroma and flavor of wheat and firmness,

Our soup is made with the utmost care.
